Synopsis
Delicious in crumbles, tarts or simply stewed rhubarb is easy to grow and very hardy. Plant your seeds in autumn to benefit from an early harvest of rhubarb, forced plants can be ready around 3 weeks early than those grown outside. Using a traditional forcing jar or, as in this series, a large terracotta pot with the bottom cut off but kept to place over the top to keep the plant in the dark. Forced rhubarb stems tend to be lighter in colour and often more tender.
